Hey, would it be Possible to Install OS X Mavericks on an Ryzen 5 3600?
 
No, you would need kernel patches for Mavericks to work.

You can install High Sierra or newer as there are kernel patches available, but nothing older using OpenCore and Vanilla process.

Not using the OpenCore vanilla process.

You need to use a patched kernel to run any version of macOS older than High Sierra. I don't think a patched kernel was created for a Ryzen system to run Mavericks, Yosemite or El Capitan.

Maybe there is a patched kernel that will work with your Ryzen system running macOS Sierra, but that being the case you might as well use the Vanilla method and run High Sierra.
