Your /EFI/OC/Kexts folder is missing some essential kexts.

Unnecessary or orphan kexts removed.

None of these kexts are required for macOS to boot.
You have HfsPlus.efi and OpenHfsPlus.efi in your Drivers folder, you don't need both drivers. Delete the OpenHfsPlus.efi driver, as HfsPlus is a better driver.
You are missing OpenCanopy.efi driver, which is essential if you want to use the OpenCore GUI in place of the Text based list at the boot screen.
You are using a version of OpenRuntime.efi from an earlier version of OpenCore. All the drivers, except HfsPlus.efi should be from the same OpenCore release. Same goes for the Tools folder, BOOTx64.efi and OpenCore.efi in your case with you using OC 1.0.3 they should all be dated 3 Dec 2024.
I have cleaned up your EFI folder contents, as well as your config.plist to make it easier to navigate and read. I have also fixed the 15+ errors in the config.plist highlighted by OpenCore's ocvalidate script.
Try this revised EFI and see if it gets you any further along with the installation.
For future reference use Zip files for attaching folders etc. not RAR, as macOS works natively with Zip files. We have to install a third party app to work with RAR files.
